My grandparents and my parents regularly cooked it when was in season. They boiled it more than twice though. It was actually pretty good from what I remember! It's been about 25 years since I've had any though. I'm very interested in Kudzu too 02/17/2008 10:24

I thought folks might like some information on "Polk Salad." That is a slang name. More commonly it is poke, pokeweed, pokebush, pokeberry, pokeroot, poke salet, inkberry, or ombu'. Young leaves can be eaten after boiling and draining at least twice because it is poisonous to mammals. Tastes similar to asparagus. The ink from the berries can be used for food coloring or dye. It is believed to have a number of medicinal uses. Researchers have extracted a substance which will cure childhood leukemia in about 80% of cases. Grows from Florida to Texas and as far north as Minnesota.
